Broccoli

We recognize it thanks to its well-stocked head and its pretty green color, we love it for its versatility.

It can be eaten raw, in a salad or with a dip, or cooked, in an Asian stir-fry, in soup or in a gratin.

Don't waste the stalk: just peel it and then eat it raw or add it to our recipes.

Preferably steam it, leaving it crunchy. It will be better and richer in nutrients.

cooking technique

  • Broccoli can be steamed in 5-7 minutes, boiled in water in 3-5 minutes, or pan-fried in olive oil in 5-7 minutes.

  • It can also be eaten raw, but it is then more difficult to digest.

Caution: Broccoli is usually overcooked. Preferably steam it, leaving it crunchy. It will be better and richer in nutrients.

The average price of fresh broccoli is around $3. However, if you want to save money, you can get frozen broccoli for an average price of $1 per 100g.

The term "broccoli" comes from the Italianbroccowhich means "arm or branch on which the head rests" or "cabbage shoots".

How to choose it

Make sure the stem is not dry but firm. The buttons should also be tight and green. If yellow spots begin to appear on the broccoli, it is not fresh.

Conservation

  • Refrigerator: Broccoli keeps very well in the refrigerator and will stay fresh for about a week.

  • Freezer: However, if you want to keep it longer, you can blanch and freeze it. In the freezer, broccoli stalks can be stored very well for up to 12 months.

Tip: How to revive wilted broccoli 

To revive wilted broccoli, plunge it into ice water for a few minutes. Thereafter, dry it and use it immediately.
